Go Neng’s Incredible Edibles
When I heard that a vendor in Chiang Mai made Pa Thong Go in the shape of animals, I had to see it. Pa thong go is a type of Chinese donut that is available all over Thailand, but these sounded special! By the time we arrived at his food stand near the famous Warorot Market, I already had the photos that I wanted to make in my head.
อร่อยยามเช้าวันนี้ THAILAND 180º พาไปชม&ชิม “ปาท่องโก๋-โกเหน่ง” ข้างตลาดต้นลำไย เมืองเชียงใหม่ … หลายคนอาจจะระพึงว่าจะพามาดูปาท่องโก๋ทำไม ธรรมดาเกินไปรึเปล่า หากินได้ทั่วไปตั้งเหนือจรดใต้ … เราบอกเลยว่า ปาท่องโก๋-โกเหน่ง ไม่ธรรมดา! มีทั้งจระเข้, ไดโนเสาร์, ช้าง … คุณเอ็ดได้ยินดังนั้น ไม่รอช้า รีบให้พาไปทันที จะไปกินไดโนเสาร์ทอด
We decided to order off the menu, choosing a T-Rex and a crocodile. Go Neng, the artist/chef worked fast and the crocodile was floating in the wok before I had my camera ready.
Crocodile Donut lurking in a Wok
เดินเข้าซอยข้างตลาดต้นลำไยมานิดเดียว เห็นผู้คนยืนล้อมร้านรอปาท่องโก๋ และอีกส่วนหนึ่งนั่งจิบกาแฟและน้ำเต้าหู้ ดูเมนูเสร็จ สั่งปุ๊บ โกเหน่งหยิบแป้งมาทำปั๊บ ชำนาญมาก ถ่ายภาพแทบไม่ทัน จระเข้ลอยคออยู่ในกระทะแล้ว คราวนี้เริ่มทำไดโน่ทีเร็กซ์ โกเหน่งชี้ให้เราดูและบอกว่า เจ้าทีเร็กซ์น้อยนี่มีทีเร็กซ์น้อยๆด้วยนะ อารมณ์ขันจริงๆเลย ร้านโกเหน่งทำงานกันเป็นทีมช่วยกันขายทั้งครอบครัว แต่ผู้ที่ทำปาท่องโก๋รูปสัตว์ต้องเป็นโกเหน่งเท่านั้น เป็นที่นิยมชมชอบทั้งเด็กเล็กเด็กโต แม้แต่ผู้ใหญ่ยังชอบเลย
Next, he began making the dinosaur. He really enjoys his work and it shows! “If you look closely, you’ll see that this is a male dinosaur”, he said grinning. Go Neng has been making donuts for over twenty years, but it was ten years ago that he got the idea of making animal shapes, after a visit to the zoo with his son. He had to reformulate his dough recipe a bit and was soon getting coverage from the Thai newspapers and TV. His food stand is now very crowded in the mornings and evenings, and he has added a dragon, frog, elephant, pig, buffalo and even “Angry Bird” shapes to his repertoire.

I couldn’t resist making a photo of the T-Rex swimming with the croc, along with the more common shapes.
ตอนนี้เจ้าทีเร็กซ์น้อยก็ลงไปว่ายเล่นกับจระเข้ในกระทะเรียบร้อย กลับไปกลับมาจนสุก สีเหลืองทองสวย ปาท่องโก๋ธรรมดาก็มีขาย ตัวละ ๒ บาท หรือจะเป็นแบบเกลียวโรยงาก็ตัวละ ๒ บาทเช่นกัน โกเหน่งขายปาท่องโก๋มากว่ายี่สิบปีแล้ว แต่ไอเดียบรรเจิดเมื่อครั้งพาลูกชายไปเที่ยวสวนสัตว์
และกลับมาลองปั้นดินน้ำมันเป็นรูปจระเข้ให้ลูกชาย จนทดลองนำแป้งปาท่องโก๋มาหัดทำซึ่งแรกๆก็เละ แต่พยายามและพัฒนาสูตรแป้งจนสำเร็จ มีทั้งลูกค้าบอกต่อๆกันไป มีทั้งหนังสือพิมพ์และรายการทีวีมาขอสัมภาษณ์มากมาย
A Dinosaur and Crocodile Mingle with Other Donuts
His father bagged our crocodile while the T-Rex continued to fry. The whole family is involved with the business and work well together as a team; making warm soy milk, preparing the dough, serving the customers and washing the dishes.
จับจระเข้และทีเร็กซ์ใส่ถุง … ปาท่องโก๋รูปสัตว์นี้ จะมีเนื้อแป้งที่เหนียวและเนื้อแน่นกว่า ข้างนอกกรอบข้างในนุ่ม กินจระเข้เข้าไปตัวเดียวอิ่มอยู่ท้องเลย อย่าลืมซื้อสังขยาใบเตยอันหอมหวานมาด้วยนะ พอคุณเอ็ดเห็นสังขยาใบเตย รีบบอกเลยว่าไปสรรหาของกินไม่ธรรมดามา ก็ต้องมีวิธีกินที่ไม่ธรรมดาสิ! เริ่มด้วยการหักคอเจ้าทีเร็กซ์ แล้วเทสังขยาใบเตยลงไปข้างใน บีบๆนิดนึงให้สังขยาชุ่มเต็มข้างในแล้วกัดเต็มๆ คำ… ฟินน์
Bagging a Crocodile Donut
Once we were home it was time to sample our goodies. Fon surprised me with a small container of green Pandanus custard that she had bought, which is the perfect filling. I twisted off the head of the T-Rex and forced a few spoon full inside. After letting it soften a bit, I enjoyed the art on a whole new level. The donuts were crispy on the outside and soft inside. Just perfect!
ที่ร้านโกเหน่ง มีโต๊ะให้นั่ง เปิดประมาณหกโมงเช้าถึงสิบเอ็ดโมงครึ่ง มีเมนูให้เลือกทั้งกาแฟ ไมโล นมสด ปาท่องโก๋ ซาลาเปา สังขยาใบเตย ไข่ลวก และน้ำเต้าหู้ ปาท่องโก๋รูปสัตว์นี่โกเหน่งทำมาแล้วหลายชนิด ทั้ง มังกร กบ ช้าง หมู ควาย แม้แต่ angry bird ก็ทำมาแล้ว .. แถมช่วงเทศกาลลอยกระทงก็ยังทำเป็นรูปกระทงอีกต่างหาก ใครมาเที่ยวเชียงใหม่ต้องแวะไปให้ได้นะ
